Grilled Coriander Chicken.

I made this delicious chicken the other night and was wondering if it is ‘fancy’ enough to be on one fine day. I decided: yes, it is. Even if it is simple. It’s fresh, healthy and great weekday dinner. I served it with cucumber yoghurt and roasted tomatoes.

Coriander Chicken

Grilled Coriander Chicken.

Serves: 2

Ingredients:

300 g chicken breast filet
2 tbsp olive oil
2 tbsp lemon juice
1 bunch coriander, fresh
Sea salt
Black pepper

Directions:

  1. Season chicken breast filet on both sides with sea salt and fresh black pepper.
  2. Combine olive oil, lemon juice and chopped coriander in a shallow bowl.
  3. Add chicken to bowl and work coriander mixture into it. Allow to marinate at room temperature for about 60 minutes. Acutally, I was starving so it marinated only for 15 minutes and it was just fine.
  4. Cook chicken in a griddle pan on a medium heat for about 8 minutes per side, or until desired doneness.
  5. Serve with whatever you like. Like fresh green salad. Or roasted vegetables. Or some warm Naan bread. Well the list is endless. You name it.

    Looks good! And I happen to have half a lemon in my fridge and a large amount of cilantro (coriander) going wild in my garden. Time to do a little “weeding.” Thanks!
