Grilled Coriander Chicken.

I made this delicious chicken the other night and was wondering if it is ‘fancy’ enough to be on one fine day. I decided: yes, it is. Even if it is simple. It’s fresh, healthy and great weekday dinner. I served it with cucumber yoghurt and roasted tomatoes.

Grilled Coriander Chicken.
Serves: 2
Ingredients:
300 g chicken breast filet
2 tbsp olive oil
2 tbsp lemon juice
1 bunch coriander, fresh
Sea salt
Black pepper
Directions:
- Season chicken breast filet on both sides with sea salt and fresh black pepper.
- Combine olive oil, lemon juice and chopped coriander in a shallow bowl.
- Add chicken to bowl and work coriander mixture into it. Allow to marinate at room temperature for about 60 minutes. Acutally, I was starving so it marinated only for 15 minutes and it was just fine.
- Cook chicken in a griddle pan on a medium heat for about 8 minutes per side, or until desired doneness.
- Serve with whatever you like. Like fresh green salad. Or roasted vegetables. Or some warm Naan bread. Well the list is endless. You name it.
